Father’s Day Sunday and Adopting Cats

Let’s back up here…Father’s Day was a crazy day for us!  We left the house in the morning headed to New Jersey to Tim’s grandfather’s house.  We met his parents, sister and kids, grandfather, and grandfather’s lady friend and had a late lunch with them.  I brought along Peanut Butter Cup Blondies and they were so sweet and delicious!

Peanut Butter Blondies, adapted from Baking and Boys! who adapted them from Dorie Greenspan’s Chewy, Chunky Blondies

2 cups all-purpose flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, room temperature

1  1/2 cups light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup Reese’s peanut butter chips

about 20 mini Reese’s Peanut Butter Cups, chopped

1/2 cup semisweet chocolate chips

Preheat oven to 325 degrees.  Line a 9×13 baking pan with foil and lightly grease.

1. Cream together the butter and sugars for a few minutes, until light and fluffy.  Add eggs one at a time, beating one minute between each addition.  Mix in vanilla.

2. Sift together the flour, baking powder, baking soda and salt, then add to creamed ingredients and mix just until combined.

3. Stir in chips and candy with a wooden spoon or spatula until combined. 

4. Spread in pan and bake for forty minutes.  Begin testing with toothpick inserted in center after 30 minutes and remove from oven when toothpick comes out clean.  Cool completely on wire rack.  Remove from pan using excess foil or parchment and cut into desired sized bars.

The only real change I made to the ingredients was the add-ins – I decreased the chips from 1 cup of the chocolate and 1 cup of the peanut butter to 1/2 a cup of each but feel free to throw in the whole cup or add more chopped Reese’s!

New Kitties!

On our way home from New Jersey we stopped in Philadelphia to meet two cats – a momma cat and her son Merlin.  We loved them as soon as momma crawled up onto my husband’s neck and snuggled in!  So as you may already know, we decided to adopt them!  We stopped to pick up some kitty supplies on Sunday night and on Monday after I got home from work we headed to the Philadelphia SPCA to meet the kitties’ foster mom to pick up our babies from her!

They were actually so good on the hour+ car ride home!  In the last three weeks they’ve gotten new names – Gracie and Cooper – and are settling into their new home very well!  Here’s a more recent picture of them sunning themselves by the window:

    Your kitties are so cute!
    I have a cat but I desperately want another kitten!
